I discovered giant zucchinis store just like winter squash. Unable to find any unlocked cars I had stored a couple in the cabinet to make fake apple cobbler. You peel off the tough rind, seed then chop the rest into thin little pieces. People can't tell the difference. 8C zucchini peeled and remove all seeds 3/4C brown sugar 1T cinnamon 3/4C water 1/4C lemon juice -for the topping- 1C butter 1C oatmeal 1T cinnamon 1C brown sugar 1 1/2C flour Cut the zucchini into small 1/4" thick slices. In a large pot combine zucchini, cinnamon, brown sugar, lemon juice and water. Bring to boil stir occasionally for 15 minutes. Preheat oven to 375. While it boils make the topping. Mix oatmeal, cinnamon, brown sugar, flour and blend. When zucchini is done boiling pour into a greased 9x13 pan. Distribute topping with fingers. Bake uncovered for 55 to 60 minutes. The edges will be brown when ready.
