Pioneer Bread

INGREDIENTS 2 ½ Cups – 3 Cups All Purpose Flour 1 Package Active Dry Yeast 1 ¼ Cups Water 1 Tbsp Sugar ¾ Tsp Salt INSTRUCTIONS 1. In a large mixing bowl, mix 1 Cup of flour and the yeast. KitchenAid: Add the above. Using the whisk attachment, mix the flour and yeast on #1 setting until satisfied that yeast and flour are mixed well. 2. In a sauce pan, heat the water, sugar and salt until warm (115°F), stirring until dissolved. 3. Pour water into bowl with flour/yeast mixture. Stir until mixed thoroughly without any lumps. KitchenAid: Perform the above. Using the whisk attachment, mix on #1 setting for 30 seconds, making sure the sides are scraped. Then mix at #2 setting for approximately 3 minutes. 4. By hand, stir in enough remaining flour to make a soft dough. Shape into a ball and place in a lightly greased bowl (Crisco Shortening or Stick Butter). Turn the ball one entire revolution in the lightly greased bowl, cover with a towel and let rise out of drafts until it is double in size (usually 40 minutes). KitchenAid: All of the same is performed, however just pour in the flour and mixing using the bread dough attachment. Use the #1 setting only. Stop the mixing when the flour on the sides of the bowl is gone and a “ball” has formed around the mixing attachment. 5. Once the dough has risen to double its size, take the towel off and gently punch the air out. Let sit for another 10 minutes. 6. Grease the bottom of a casserole dish, metal cooking sheet, or cast iron skillet. If you use a bread loaf pan, make sure you grease the bottom and sides. 8. Turn bowl upside down and let dough fall out of the bowl onto what you are baking it on. If you are using a bread loaf pan, push the sides down and corners so there are no air pockets. Don’t worry, even though you have smashed it down all over, it will look like a normal loaf of bread when you are done. 7. Bake at 400°F for 40-45 minutes or until top starts to brown. OPTIONAL If you want to butter the loaf from within, melt a stick of butter. Use an injector like what is used for a turkey, fill it with the melted butter and inject the loaf throughout the loaf about every couple inches around 25-30 minutes of baking. Left over butter, pour over the top of the loaf 30-35 minutes of baking. Probably extremely unhealthy, but tastes amazing and you don’t have to butter it, just put it in the microwave for 15-20 seconds.
