You will also loose weight while it ages..maybe 5% or so...most people age their meat for at least 2 weeks. We charge for the hanging weight before aging. The processor I use charges $.42/lb plus $30 slaughter fee. I'm getting ready to feed out a little bull for the first time (brother-in-law recently passed away and I'm on my own now) so will learn first hand. </p><p>Hope this helps...I'm new just like you and learning each day...and certainly not an expert...plenty of people on here can provide more "seasoned" advice.
