    Oh my gosh. That's horrible. Now I'm for sure willing to feed a couple of extra months if it means using our trusted butcher. Are there butchers who don't have a retail storefront? Would those be more trustworthy?

    Seven days seems to be standard. Our regular butcher makes an exception for us on the 10 days.

    Right, I was kind of ticked off that they refused 10 days but we were backed into a corner. The only other butcher available in our time frame butchered on-site, and we're just not set up for that.

    Right, we don't have a livestock scale, and I know there is some shrink from hot carcass weight after hanging. But based on previous experience the percentage just seemed skimpier than expected. Oh well, live and learn, and we'll book our regular place much farther ahead!

    Yeah, I really hate to think that :0( It would be VERY hard to prove any skimming off the top. But eight pounds off between quarters....? Just doesn't seem right. And when they don't stamp the customer's name on the packs -- even when they were brought out separately -- it would be even harder...

    You guys are geniuses! It's working! Pix from 12/20, 12/27 and 12/28. Today we pushed the grain pan way to the back and he actually hopped up inside! I am so relieved. The plan is nearly complete..... New butcher date is Jan. 11 so he'll be good and ready to go.

    Probably the safest place (snow-wise) would be the south gate, which we could plow a path to if needed. But that pen area is rather wide open. Backing up to the lean-to would be ideal because of the ability to funnel him into the trailer, but also more of a challenge to get out of if it snows....
