When to turn cattle loose on newly seeded pasture

I just started raising a few head of cattle because I was tired of mowing that field. It was already fenced for horses, So I didnt have much sweat in it. I have it divided in half and sprayed the one half with Glyphosate then reseeded with a quality cattle pasture seed mix for my East Central Indiana area. When would you turn the cattle loose on it? I was guessing around 12-14" high. I was also thinking of planting some winter rye to get it going quicker. What do you think? I do have some annual rye and winter wheat laying around that I could plant too. I would have to buy the winter rye thou.
