Supposedly the quality goes down but the cows love it especially if its got that caramel look in the center. I baled some once that smelled like chewing tobacco and the cows would just dig into the center.

I dont know how it effects the quality. The quality is based on the food value; i.e protein, fat etc,etc.
I'm not sure how to explain this. Its matter of speaking starting to rot, or ferment. You might have put it up with to much moisture.
Is this hay or straw? Just wondering.
 
It is hay, almost 100% leaf, I have fed out 6 bales (3x3x8) and have only found a dozen or so grain heads. I am flaking it out about 1/3 of a bale at a time.
