Can someone tell me the difference between slaughter cows - boners and breakers?

They are classifications for relatively poor slaughter cows. If memory serves, breakers are technically not quite as lean as boners and will bring slightly more. They are often grouped into one category for the sake of conversation.

boners will have about 15-20% body fat and breakers will
be 20-30%bodyfat(rolly poly cows), while on the other side you
have lean cows that are 10-15 % body fat.
A heavy high dressing lean cow will bring more money than
any other slaughter cow, because it will dress out sililiar to a bull.
