When your buying half a cow which is the better half to buy? For example you and a friend are going halfs on a cow to buy which half are you going to get better beff out of the head or the ass?

Of course the "correct" answer here is to buy a side. But it really depends on taste. I prefer the front cause I love chuck and cross rib roasts, and run out things to make with the round. The hind is more expensive simply because of the porterhouse and t-bone steaks. Those steaks are the same piece of meat as the Rib steak ( Longissmus dorsi muscle) but with the added tenderloin.
The hind often sells with a 40 cent premium to the front and I don't think it deserves that status.
Buy the top half. Lot better than the bottom half. Oh brother.
