Sky you need to open up a restaurant. People would drive from miles around to eat at the skyhighrestaurant.

Some other people told me the same but I would need you to be my assistant pit master and mechanic to fix stuff when it breaks... If thats ok with you we can start in a month.

I don't see much difference in pit grease than any other grease and am good at tinkering . If I was younger and closer (not making excuses) I believe those ribs would sell like hot cakes. When it is up/running and the business start selling stock I will buy and be a part owner. Can't beat that.

everyone loves ribs... brick n morter is what would be biggest expense and downfall

Starting any business would be a lot of work and usually the first few years profits are slim if any. Sky I can tell as good as you like to cook that is one thing you enjoy enough to make a go at if you ever tried.

I had heard so much about them, I decided to try to make the original recipe Onion Smashburgers last friday evening.
(Evidently, they are a 'thing' in Oklahoma.) The object is to smash the ball of ground beef down as thin as possible.
Don't try it with a spatula that has slots or holes in it.
I added nothing to the burger. No tomato/lettuce or cheese. Just salt/pepper and some yellow mustard. The caramelized onions are what makes them taste good..but...

.... but I have to say, I don't see what the big attraction is. Good, but not great. Maybe, if ya had a house full of kids and on a limited budget it would stretch a lb of ground beef a long way.
 
The "Smash Burger" has been around a while. That is the way Shake Shack does theirs. I have made them and it is best to do them outside on searing hot Cast Iron because they will smoke. The best thing is the crust the burger forms. I haven't tried the Onion Burger yet though. Kent Rollins had a video on them just a few days ago.
 
Today we tested the Wisco portable pizza oven. I will say that a stone oven is better, but such a portable one bakes pizza with dignity and, most importantly, takes up little space. Can be easily stowed away in the garage after use, for example. The pizza is delicious with crispy sides. Very tasty because we used quality products.
