A couple years ago when the wife and I drove through the open spaces of Wyoming we quickly realized national branded places to eat were nonexistent. I think it might have been Cody we pulled into a Taco John…looked new and had a resemblance of a fast food joint we are accustom too so we stopped. Struck us oddly that tater tot medallions came with everything. It's rice and beans down here. 😄
 
MM, you are ready to move up to a 1/2 or whole boneless loin or a boston butt.
Lots of rub and low and slow. Loosely wrap in foil.
You can thank me later.

While I'm sure that's good, the best way to cook a Boston butt is to slice it into two inch thick steaks, and cook it slow directly over hot coals.
