Doesn't much matter. Usually you want to wait until the calves are a few days old, otherwise it depends on your facilities (or help) if you wrestle the calves, it is certainly easier to do them when they are little. If you have a tipping table or calf chute probably between a few days and 300 lbs. If you are just going to use a headgate or cow squeeze then they need to be a bit bigger.
