Calves can be weaned at any age, however, if you are sell by the pound you may want to wean when the calf is the heavest, 6 to 8 months of age. If your cows are in need of condition (weight) you may have to wean earlier. Generally speeking 205 days old is when weaning takes place for herd improvement records.
7 months is the average. you need to give the cow time to recuperate before the next calf, at least 60-90 days. they can tolerate it earlier but if you want weight mom is the best source.
