Depends a lot on how well it is built up and drained. Graded with hard surfaces are often 8 to 12 feet wide. I have some unimproved lanes that are 14 to 16 feet wide, but they are a mess in the spring...

Polywire on a least one side would give you some flexibility.
 
Would make it at least 20 ft wide but think 30 ft better. Another possibility is 2 parallel lanes say 20 ft each but only use 1 at a time so have a spare for those long wet spells. Maybe 2 barbed wire fences 40 ft apart with poly wire dividing it in half. Certainly think too wide is better than too narrow
