If you only have a few cattle, it does not really matter as you can probably remember until you have to pen them for some other reason. If you have more than you can remember then you need to tag ASAP. It gets really hard to pair them up when you get a lot of them in the corral at the same time.
If the mom will let you it is best same day they are born.
If you do a search on here there are a lot of great ideas on how to do this.
 
We do ours within 24 hours or so of birth, at the same time we band, dehorn and weigh them. We have to many to wait. If a calf gets sick, and we need to bring it in, we have to be able go out and find the cow (if she doesn't follow us in). Pretty hard to do that with out a tag. It can definitely be done, but tagging makes things much much easier.
 
We try tag them as soon as possilbe. Some even have gotten tagged while they were still a bit slick but we tend to let mom have a few hours with them.. Much past 12-24 hours and it can be a trick to catch those suckers, erspecially the ones born on warm spring days...
