I have yellow crooked neck squash I need to do something with
Anyone have a good squash casserole recipe ?

Cant help you with the casserole. but I like to slice them and cut up an onion add a little butter to a frying pan and sauté till all is tender.
 
I've eaten enough of it fried I can feel my arteries closing up
I think I better try something new
 
Coworker of mine dices it up and cooks it with Mac and Cheese. Says his kids love it and don't even realize they are eating squash. I like to pan fry or grill mine with a little bit of oil and garlic salt, wish I was better and patient enough to try some more healthy uses for it.
 
Squash Casserole (like Black Eyed Pea Restaurant)

Ingredients
5 lb medium yellow summer squash, cleaned and cut into 2" lengths
1/2 c chopped onion
1 c soft bread crumbs(crumble a few slices of bread/rolls in a food processor)
2 large eggs
1 stick butter
1/4 c sugar
1 tsp salt
1/2 tsp black pepper
BREADCRUMB TOPPING
1/2 c soft bread crumbs
2 Tbsp butter, melted

Directions
step 1
Cut tips off squash and cut each squash into 3 or 4 pieces. Drop squash and chopped onion into a large saucepan with enough boiling water to cover. Return to boil, reduce heat and cook until tender. Drain well in colander and mash, allowing excess liquid to drain.

step 2
Combine with beaten eggs, 1-cup breadcrumbs, butter, sugar, salt, onion, and pepper. Turn into a greased 3-quart casserole.

step 3
Toss remaining bread crumbs with melted butter and sprinkle over top of casserole.
Bake at 350 degrees for 30 minutes, until lightly browned.
