They are cells present in milk that at elevated levels indicate, usually some sort of illness, but they can also be caused by stress, etc. Cell counts when they reach a certain level detract from the shelflife of milk and the milk doesn't work as well for making cheese. If you do a Google search for Somatic Cell Count you will get a whole bunch of sites with some very in depth information.
