The Santa Gertrudis breed is focusing more on tenderness. We do, though have cattle that are grading high choice, and into prime. Check out the American Breeds Coalition, headed up by Beefmaster President, Nolan Ryan. This is a program that has recently started and is a definite tool for Santa Gertrudis breeders and those that like the meat they produce.
