Just my thoughts, but I think some cows develop a more robust placental system then others.

As that recip eats at the end of the gestation, pounds are going to that calf. this could lead to a larger calf.

That's why recips should always be close in genetics to the embryo, and yet rarely is the case.

I guess it makes sense that a big cow will consume more calories than a smaller cow and put more calories into the calf especially at the end of the gestation.
