Ingredients

* 3 pounds small red potatoes scrubbed and quartered
* 1 pound bbq pork
* 2 tablespoons malt vinegar
* 1 cup Dukes mayonnaise
* 3 tablespoons whole-grain mustard
* 4 tablespoons sugar
* Salt and pepper
* 6 hard boiled eggs, chopped

Directions

Place potatoes in cold water in a medium saucepan. Bring to a boil and turn down
the heat to medium, letting them cook until fork tender, about 15 minutes.
Drain the potatoes, but DO NOT rinse them under cold water. Let the potatoes
cool for 10 minutes.
In a small bowl combine vinegar, mayonnaise, mustard, sugar, salt & pepper.
Transfer potatoes to a mixing bowl and sprinkle bbq pork and hard boiled eggs over them.
Then, fold mayonnaise mixture into the potatoes and serve at room temperature.

Sounds good.....I'd probably add me some finely chopped dill pickles. Am printing this for the wife.

Try it without them first. The malt vinegar adds the pickle taste.
