Plain / choice cattle

At the local salebarn, when I look at the sales report online, http://www.mwstockyards.com, I see sales for plain and sales for choice heifers and steers. The price is usually around .10-.20 a pound difference. What is the difference, and who determines this, the salebarn? How do you get your cows to be choice instead of plain?
 
Its prety simple....the other guy's cattle are choiced and yours are plain...They sold better last week and the price goes up after you sell...Black cows sell better if your have white or red... until you get black, then there's a shortage of white and red....Now if you feed them out the bottom drops out a week before slaughter...I once had a nice steer just about completely weaned from all food, but he died about a week into his first two weeks of traning.....NOW TELL ME IT DON"T HAPPEN!!!
 
Hmmm....kinda like every other business then! I watched steel prices go up and up and up for weeks, with no end in site! So I decide to order a truck load of shafting (12K pounds worth), only to see the price go down about .15 a pound 10 days later!! ARGGGHHHH!!!!!!
