Pigweed and pokeweed

I made the mistake of not killing the first poke plant I saw here. Now it's everywhere thanks to the birds. Did you know those things will get 8 to 10'?
 
Polk doesn't have to be boiled several times, if so I would be deader than a hammer.
Mom used to cook it in a skillet somehow. Wife doesn't like to cook "weeds"

In the right spot they will. There are some next to the old tobacco barn that are 6 feet tall right now.

Poke is very low on my weed list. I prefer it to cocklebur, ragweed, spiny pigweed, poison hemlock and thistles.
