I am looking for a breed of cattle to raise for people conserned about high fat in meat. Can anyone refer me to a source of information on nutritional characteristics of breeds such as calories, tenderness, and cholesteral?

Look into BEEFALO you won't be sorry. I've been into it for two years. I havn't been sorry yet!! I have nothing but praise for the breed.

I haven't got that far yet, there is so much need in the priviate sector.That is where I perfer, to be custom meats ,there is alot you need to do to be USDA approved. You wouldn't want to go to cattle sales as beefalo sell for alot more in different areas.
