For hay, it would be alfalfa/grass mix. On pasture we had straight grass with volunteer clover or alfalfa growing in the mix. Wheat is good if you are wanting to provide a high-energy source for the hottest part of the summer, at least where I live. But what grass/legume mix you choose to plant is up to you and what can be grown in your location. Where you are, you are fortunate to be able to grow both cool-season and warm-season grasses and have them come back every year. Up here, warm season grasses are not perennials: they have to be replanted after every winter season here.
