It is not different from recording a check ledger, or entering a bill, into Quickbooks. It requires receipts, or a few notes

We use the retail price.

We record cash sales, as I need real books to run the company.

Now then, I suspect many of our costs are lower, because (in this case) the welder, is not claiming the value of the food. That is his side of the street.
