I made this tonight, originally from Pampered Chef
1/2 cup onion
garlic (I use roasted but you don't have to, however much you like)
2-3 chicken breasts
salt
pepper
1 can tomatoes with chiles, don't drain
1/2 tsp chili powder
1/2 tsp cumin
3 cups chicken broth (I used turkey that I made and froze)
1/2 large can tomato juice
Cook up onion and garlic. Add chicken and cook through. Add everything else and simmer for a while. I don't get to fussy on amounts, suit to your tastes. I served with sour cream and cheddar cheese. Good with tortillas too. Good on a chilly winter night- just like tonight!
