I hope I can give D'Artagnan all the respect he deserves. He gave his life for this day and the least I can do is my best by him.



Wiped him down with olive oil then dusted him well with this spice mix - plus a little something extra.
1 tablespoon dried thyme
1 1/2 tablespoon dried rosemary
4 tablespoons freshly cracked tri-color pepper
1 1/2 tablespoons granulated garlic
1 1/2 tablespoons granulated onion
3 tablespoons kosher salt
1 tablespoon coriander, toasted and cracked




Vacpacked him and into the cooler to rest till Christmas morning where he will be given a smoke bath.

I will on one condition. Condition being I don't fall asleep while smoking it and turn D'Artagnan into some unrecognizable crispy critter. Sadly, its been done before and I pale to think of this happening again.
 
D'Artagnan got the respect he deserved and made several people very happy.

Pulled from smoker at 134F.



Tented and put to rest then sliced.



Served with mash potatoes, potato casserole, peas, greens, creamed corn and pickled asparagus.
 
It was really good. Fed 15 head and still have leftovers. How anyone could be vegetarian is beyond me.
