The calf in the pic will most likely shed off black....
 
Yes, I know Chan & Keith quite well.
When a calf is born chocolate/redish colored like the calf in the above pic - you can tell if they will be black by the black around the eyes, feet, muzzle & tail. If they don't have the black in those areas, just choc, then they are most likely diluted & will always be choc - like your 3 yr old you mentioned.
