The British grading system is based on the EUROP grid with E being the highest yeilding carcases and P the poorest. ThinK belgian blue through to holstein and you get the idea. Fat cover is scored 1-5 with 5 being the fattest.
An average finished steer would grade R at fat class 3 or 4, and this is usually where the base price is set. Currently this is £1.94/kg deadweight.
