Fence jumpers - need advice

Longhorn beef is selling for $5 - $12 pound. Really. Comparable nutritionally to chicken. Health conscious people want them - grass fed, grass finished.

Having said that - thanks for all of your comments. We are still going to try to have him processed - but will take to the sale barn if that doesn't materialize.

FYI - until he jumped out of our loading pen at 5 yo, never had a problem with him. No pacing, easy going, etc.

One GOOD thing about him - he's taught us more than all of our cattle all together!
 
Final update. We shot him in the pasture this past weekend, and a guy came out and field dressed him. He took the meat and butchered it out into a little bit of everything - steaks, ribs, roasts, ground, fajita strips, etc. Can let you know the taste later.

Thought it would be really hard to do - city girl raised trying to be a cattle person. However, once he was down, watching the field dressing was interesting. We have a big tractor, so that helped. Have the skull and horns out to be naturally 'cleaned.'
