"dressing" a 10 mo. Holstein steer

To make a long story slightly shorter, bought this Holstein calf as a "pal" for a lone Hereford bottle baby. She certainly enjoyed the company and all was well til he became enormous and a threat to life and limb! No experience with dairy breeds...would Junior make good freezer beef (10-11 mos.)? He is 4' at the "withers" and fleshed out like a beef steer. Looking for the least traumatic route for all. Thanks for your help.

Wack him. Hes probably about as good a eating as he'll ever be. In most communities there are custom killers that will come to the farm and do the job and haul him to the processors. Some are the butchers themselves, some are just killers that will take him wherever you want. Check with some of your custom butchers in your area, they ussually know how is good
