Because the grass is growing and I had people wanting beef, I moved my first butcher date from late July to late June. These are the two candidates. Spotted steer is 2 months older, obviously not as beefy-built. I'm happy with the red going first, I figure the white will just take longer to finish. (Next date is September, plenty of time, right?) any other opinions?

In 4 weeks (June 22) the choice will be clear.
September 7 is 15 weeks (105 days) plenty of time for Whitey to finish.
Both look to me like they will be delicious.
Hope you remember to post hanging weights ect when the time comes.

Last week my steer hung 760 lbs and I paid the butcher $648 total, which comes to 85 cents a pound, up 26% from pre-covid,
but a bit less than what most butchers are charging locally.
Last year he added another butcher fulltime and the schedule remained full. But he said he had room for a couple for the last week of May. So demand seems to be lessening, but he expected to be fully booked by the 4th of July again.

Central Texas-I'll add it. .85 would be great-even custom around here is .95, I use a great USDA for $1/lb, but they don't do back-end fees(rendering), so it works.
