When pricing cattle, what does it mean that they are selling for $78.00? Is this the price per something?

It means $78.00 per cwt (hundred pounds)

Also, if the price posted is several hundred dollars, such as $650 - 725. it probably means "each" as with a mature cow and/or a cow/calf pair. And, "sometimes" a less than responsible seller might put a calf with the cow to sell as a pair where the calf is NOT from the cow being sold but just a calf he/she wants to get rid of.
