We have a cow. She is 4. Part dairy,part beef. She didn't breed. So we called 2 processors, both told me that USDA will not allow them to butcher anything over 30 months old. I can sell her for cull prices at the auction, then they can take the meat and sell it for $5/lb. John & Jill Q public are going to get exactly what they deserve, but not what they thought.
 
I think its anything under 30 months old, and then you have to have some sort of certificate from the Vet, we butcher older animals all the time, and as long as you get it into all hamburger there shouldn't be a problem.
