Butchering own cattle?

All I have ever eaten is beef from our own cattle. We use a processor.

I have processed my own beef in the past and probably will at some point in the future but most of it goes out to be processed. Actually I eat very little beef. As an old rancher once told me, "Beef is for selling. Deer and elk are for eating." Back when all the kids were still at home we ate the venison plus a lot of beef. By myself now, I have a tough time eating an elk in a year.
