Your post was bang on until you did the math. No animal has more than 8/8ths. You had the right idea but the equation is wrong.
To get your 5/8 angus, 3/8 brahman you breed a half blood (4/8 angus 4/8 brahman) to a 3/4 angus(6/8 angus 2/8 brahman). Take half of each ratio of angus blood (1/2 of 4/8 is 2/8 and 1/2 of 6/8 is 3/8) and add them together. 2/8 + 3/8 = 5/8. This is the ratio of the total. In a percent form it is 62.5%
To check the math, do the brahman blood, (1/2 of 4/8 is 2/8, and 1/2 of 2/8 is 1/8) 2/8+1/8=3/8..... 3/8 brahman + 5/8 angus = 8/8 or one whole animal called brangus.
