I can't address the last two parts but the first one is easy. Brahman and Brahman influence cattle utilize their entire range, not just that which is close to water. Brahman cattle also tend to graze differently then Bos Taurus cattle. Rather then pretty much stand in one spot and eat, they tend to eat and walk, eat and walk. They cover a lot more territory. Of course these a generalized, not all of either type all the same. We've never used them in a MIG environment only range, so there may be drawbacks to that useage.
