I thought boners were the thin slaughter cows - soup bone material and the breakers were broken mouths but still holding their weight.... is this right?

Correct grasshopper.

"White cows" or "High Quality Cows"- these carcasses have a significant covering of white fat, good body conformation, and high muscle quality (color and marbling).
"Boners and Breakers- these are relatively lean carcasses with some marbling and good body conformation.
"Cutters and Canners - these are lean carcasses with little or no marbling and with poor to very poor body conformation.
"Bulls"- these are bull carcasses that usually have little fat cover but good body conformation.
