My friend pickles the heart and toungue ,I myself didn't care for either . I try never to waste any thing so I call a friend , he'll take all that stuff when I slaughter.

There is a lot of meat in that fifth quarter but how you prepare it is key. Don't care for the tongue or heart on its on.

Some of the mexicans prepared some tongue fajitas once and they were delicious. Wish I could have understood how they made them.
