There is a pretty good article on this web site that might get you started. Look under the "Breeds" section on the home page and then scroll down to Wagyu. I enjoyed the Kobe Beef when I was in Japan but it is labor intensive and very expensive to produce it. You might also try "Cattle on line". Good luck. Mack
