To be quite honest I have no idea I just know that's what my pops did. And the potatoes stayed fresh all winter.

I have a root cellar that is around 8 feet below ground. The potato bend walls are around 4 feet high and another 4 feet to the ground. They keep good as I got some out a few days ago.
