Bloomberg News has an article about a NYC restaurant selling $185 beef sandwiches called sandos.
A5 Wagyu beef imported from Japan, breaded and flash fried, they were described as having a crunchy exterior with
a creamy soft heart..... $185

For cheapskates "Don Wagyu" restaurant sells a $25 Sando made from crossbred Wagyu (46.875%+) named Washugyu.
They specialize in only Wagyu beef and claim to be selling 200 sandos a day. Mostly takeout as seating is limited with
just 6 counter stools.

184 @ $25 = 4,600
16 @ 185 = 2,960
Totals $7,560 per day = North of 2 million dollars a year.

1/3 food costs = 700,000 = $58,333 month
1/3 labor and management payroll including health insurance, vacation and retirement benefits 700,000 = 58,333
25% overhead $525,000 (real estate, advertising, debt retirement, insurance, taxes, utilities ect.) $43,750 month

8.4% owner's net profit = $14,700 month or 176,400 year

Heck of a lot better than growing soybeans for 9.13 bushel and selling them for 8.88 which equals about the same
expected net profit as selling Brahma beef sandwiches. :)
