Mashed Potatos

Ingredients

3 ½ pounds red skin potato
4 tablespoons kosher salt
1 medium size onion / diced
4 tablespoons butter
½ cup Dukes mayo
1 cup Daisy sour cream
½ cup heavy whipping cream
milk as need for thinning (1 – 2 cups)
salt to taste

Cooking Instructions

Clean and scrub potato skins. Do not peel. Cut each potato into 4 pieces, place in large pot, and cover with water. Add 4 tablespoons kosher salt and one medium diced onion into pot. Bring to a stiff boil. Once water is boiling, reduce temperature to a slow boil and loosely cover pot. Continue boiling for 20 minutes or until potatos are soft.

Remove pot from heat and drain liquid. Immediately place potato/onions back into same pot and add the 4 tablespoons of butter. Stir butter in until melted. Add ½ cup Dukes mayo, 1 cup Daisy sour cream, ½ cup heavy whipping cream and mix with wooden spoon. When mixed, start mashing the mixture with a potato masher. Add milk until you reach the consistency desired, and add any additional salt for taste.

Don't skimp on money and buy cheap sour cream or mayo!
