Shrimp Toast

1 lb. uncooked shrimp--minced
1 egg
2 tablespoon chopped onion
12 slices white bread
1 teaspoon grated raw ginger
1 tablespoon sherry
1/2 teaspoon salt
1 teaspoon cornstarch
1/2 cup parsley for garnish (minced)

Remove crusts from bread. Quarter. Mix all ingredients except parsley. Spread resulting paste on the bread. Fry shrimp side down in hot fat until brown. Turn over and brown other side. Serve hot as hors d'oeuvres.
