Grilled Roast Beef Rubs
3 lb Prime Rib, Rib Eye, Top Sirloin or Tenderloin Roast
1 Recipe for rub of your choice
Swiss Onion Soup-er Rub
2 tbsp onion soup mix
1/4 tsp ground nutmeg
Lemon Basil Rub
2 tsp EACH lemon pepper and garlic powder
1 tsp dried basil, crumbled
1 1/2 tsp seasoned salt
Cajun Rub
2 tsp EACH paprika, garlic, salt and curry powder
1/2 tsp cayenne (or to taste)
Rub surface of roast with one of the rub mixtures. Insert meat thermometer
into centre of roast. Grill fat-side-up or cook on rotisserie over drip
pan in closed grill over indirect medium heat (or roast on rack in oven
at 325 F) for 20-30 minutes per lb. to desired doneness. Serve drizzled
with sauce of your choice.
Makes 8-10 servings.
Super Sauces for your Roast
Swiss Onion Soup Au Jus - Combine remaining package of soup mix with
1/2 tsp (1 mL) nutmeg and 1 cup (250 mL) water and bring to boil. Simmer
5 - 10 minutes uncovered until slightly thickened. Serve with Swiss
Onion Roast.
Dijon Sauce - Heat fat-reduced (or regular) Honey Dijon salad dressing
and serve drizzled over Lemon Basil or Cajun Roast.
